Enchong Dee learns recipes from Angeline Quinto, reveals ‘what’s cooking’ on the set of Huwag Kang Mangamba

The OG ‘chinito’ heartthrob reunites with his ‘princess!’ Enchong Dee visits Angeline Quinto at home to learn yummy and ‘budgetarian’ salted egg shrimp recipes. Plus, they get to share some behind-the-scene happenings in Huwag Kang Mangamba.

Listening to Enchong’s revelations, we learn that Angeline is quite the kitchen pro. Apart from running an online food business, she also likes to experiment with new recipes. Cooking with screen veteran Sylvia Sanchez is one of her favorite pastime activities on the lock-in location of Huwag Kang Mangamba. She brings a portable stove on the set. Enchong further reveals that Angeline hangs out by the pool, near the kitchen area, that’s why she’s already friends with all the kitchen staff.

Enchong craved for ‘kaldereta’ which he says is one of Angeline’s specialties. But, considering the budget and what’s available in the kitchen, she opted to teach him salted egg shrimp in butter sauce and salted egg pasta. Two different recipes using almost the same ingredients!

Enchong’s cooking immersion begins with the basic – sanitizing the hands (with Angeline belting out the Happy Birthday Song) and preparing the ingredients:

Shrimps (peeled)

Garlic

Butter

Salted egg yolk

Spring onion

Olive oil

Chilli flakes (optional)

For the second recipe, you would need to add:

Cooked pasta

Cheese (Parmesan or Quick melt)
Basil

Enchong does all the work while Angeline instructs him. While cooking is often experimental and done in any way you fancy, here’s how Angeline modified this classic seafood recipe:

  1. Puree the salted egg yolk using a blender. You may add a little oil for a smoother texture. Set aside the mixture.
  2. Put olive oil in a heated pan. Budgetarian tip: Olive oil is healthier than regular cooking oil.
  3. Sauté the garlic in low heat.
  4. Add the butter.
  5. Once the butter melts, add the shrimps. Angeline’s tip: Refrain from over-mixing the uncooked shrimps to avoid “lansa” or smell.
  6. Once the shrimps start to turn orange, add the salted egg mixture. Budgetarian tip: Salted egg and butter are a flavourful match made in heaven! Thus, no need to add more seasonings.
  7. Put the spring onion.
  8. Add chili flakes for extra flavor.
  9. Let it cook until the sauce thickens.
  10. Your salted egg shrimp in butter sauce is now ready for a ‘kanin’ fest! Just save the other half for the pasta.

Now, pasta joins the seafood party! This pasta recipe is perfect when you have enough leftovers from the salted egg shrimp.

  1. Cook the pasta.
  2. Toss with the salted egg shrimp as the base sauce.
  3. Add cheese for a creamier texture. Mix well.
  4. Put basil for an added aroma. Budgetarian tip: Have a mini herb and vegetable garden at home. Angeline says she saves a lot by growing veggies like malunggay and spices like chlli and ginger in her backyard.
  5. You may also add chilli flakes. Voila! Your salted egg shrimp pasta is ready to be served!

Overall, the two recipes would cost around Php1, 000.
