Caldero Files: Toni’s Seve-approved Mac and Cheese Sopas recipe

Moms find this quarantine season as the best time to be adventurous in the kitchen and prepare healthy home-cooked meals for the family. But levelling up the cooking game is no easy feat. There are days when mothers run out of food ideas especially those who are feeding little kids and picky eaters. So, here’s Toni Gonzaga coming to the rescue with her unique Mac and Cheese Sopas recipe, something new to try and deliciously healthy at the same time.

Toni reinvents the classic comfort food by adding a kick of creamy cheese flavor. For the procedures, sauté garlic and onions in a pot, then add the carrots, celery, and ground meat. But for Toni’s recipe, she ditches the meat for hotdog at her son’s preference. Toni says Seve likes munching down vegetables than meat products. Toni pours in 6-8 cups water, and then adds the broccoli and macaroni pasta. Season with patis and add chicken broth. Boil for 10 minutes. Add evaporated milk once the pasta is cooked. Wait for another 3 minutes to let the pasta and other ingredients absorb the milk.  Turn off the heat. Add the cheese and stir for a creamier texture.

Seve tastes his Mommy Toni’s finished product and the young boy’s verdict: “Yummy! This is the best!”
